Do you have to plug your BlackBerry in to do an update, or do they come OTA?

It depends on model, os, network and dataplan as far as I know. I owned a Curve 8520 and Bold 9780, both prepay and both Vodafone Ireland branded. I think neither had an option to check for ota updates.
Mind you - I would always use the PC suite option, anyways. You'd want to back up your phone before a full update, anyways, and if you do it ota and the signal cuts out, you have a brick...

Yes, you can do OTA updates on blackberry. However, OTA update would come from provider and PC suite update from RIM directly. Provider can forget to put up an update or forget to enable OTA update. You always better off with PC suite as updates will show up faster and I was told there is some sort of fall back mechanism with PC Suite in case update fails.
