How do you check for updates on iOS 5?

Go to Settings - General - Software Updates.
If there is an available update, make sure you have at least 50% battery and be on wifi or a good 3G connection ;)

If you have push notifications on then the Settings app will have a little badge (like unread mail/messages) when there is an update. I think this happens when the update has downloaded in the background over wi-fi so all you need to do is apply it so it may not rely on notifications.

Not sure just yet if I am comfortable with the background downloading..
