Thinking about iTunes Match in particular, wouldn't you use a ton of data constantly streaming music from the cloud?

If you stream only, then yes, you'd use a lot of data.
But you can set it to WiFi only - ie, download tracks while on WiFi. But then you're
essentially downloading the tracks. https://discussions.apple.com/thread/4552755?start=0&tstart=0
But don't trust me - I avoid all cloud services when I can, and I know little about how to use what most efficiently.

I use Google Music on all my android devices...10,000 tracks in the cloud with just a hundred or so tracks stored on my phone for those times when i have no data connection.
there are plenty of Unlimited data tariff's out there starting at £15 for sim only and about £26 on contract phones....
