What's the best way to wipe an iPhone before selling it on so that the data is completely gone and cannot be recovered.

Your stuff on your iPhone is encrypted. Doing a factory reset breaks the encryption, and it's 'relatively' hard to retrieve data. But it's still possible IF someone really has it in for you.
Ideally, do a couple of resets. And inbetween sync some bullsh*t to it - harmless, legal videos or something... That'll overwrite what you actually stored on it. Then do another reset. And lastly, put the iPhone in recovery mode when you connect it to iTunes. iTunes will detect a phone in distress and reinstall the firmware, thus doing more overwriting.
