Can you keep apps, games, photos, messages when you change from iOS 7 to iOS 8?

Yes. When you update "over the air" - via WiFi everything is unchanged - all your settings, apps etc etc.
But: I'd always recommend to update via iTunes on your PC!
You never know....
Connect to iTunes via USB cable. Do a full backup. Then update.
Once the update is done, your phone will reboot. Leave it connected to iTunes. It will then be restored from your backup to exactly what it was before in terms of accounts, SMS, mails, apps etc... In fairness: there is no better system available. Whatever flaws and bugs Apple sometimes throws up, the backup and restore via iTunes is unrivalled.
