Fonts in iPad email
Is it possible to use fonts like bold and italics with iPad email?

Only if you jailbreak your iPad and tweak the email client... Not sure if Sparrow (an excellent 3rd party email client in the AppStore) offers advanced editing features...
Correction: apparently, from iOS5 up, bold, italics, underline etc are included in email app. My better half's off with her iPad, so I cannot check...

That's right. Hold down to highlight the word, choose Select, then tap the little arrow to the right of Suggestions.
