I believe you can somewhere in the browser settings, but I'm currently fresh out of an SGS2 - can't check. OPERA MOBILE lets you change the user agent to desktop browser. As do other 3rd party browsers.

You can also use dolphin browser, that lets you change to desktop mode too. Pretty handy.

Yes, it's possible, there's a temporary fix that'll change back every time you clear the internet history and a permanent fix which is WAY more complicated, I'll link to it on XDA, it'd take forever to write it all out.
Easy Temp. Fix:
Type "About:Useragent", minus the quote marks, into the browser bar, a box will automatically pop up with a list of options, click the desktop option. This forces sites to open their desktop version.
Harder Permanent Fix:
I hope one of these helps, though if not, Dolphin Browser is very good. Or you could flash Cyanogen Mod 7.1, which has useragent settings (permenent), built into the browser.
