What's the highest version of iOS that can be jailbroken?

I'm still back on iOS 7.something.

If you update, does it automatically take you up to the most recent version of iOS?

Pangu can jailbreak iPhones and iPads up to iOS 8.1 - the problem is you're on 7. IF you upgrade now, you get iOS 8.1.1 ;)
So: you can jailbreak iOS 7, or upgrade the OS and do not jailbreak.
Advantage: there are a lot more apps and tweaks for iOS 7.
Disadvantage: Apple plugged some very serious security holes with iOS 8.1.1
