How does Three inTouch work?

I've been looking into Three inTouch for those areas where I get no signal, but technically, how can people phone your number through WiFi?????

Basically, it doesn't matter what's connecting your mobile to the operator - traditional cell signals or routing through the internet. Your phone registers its 'address' with the operator and when they get a call to route to you, they do it over the internet.
(That's all at its very simplest, if you want to know more look up VOIP and SIP)

Do you know what happens when the phone screen is off and the wifi is turned off? I guess it renders the calling via wifi "dead" then?

yeah, if your wifi is off there's no connection

Or did you mean that you assume if your phone has gone to standby then wifi is off? This doesn't necessarily follow, but I can't speak for definite for your phone and/or the three application - there are ways of configuring so wifi is on in reduced power.
