Yep, sim-unlocking is quite separate to jailbreaking.

If your iPhone is unlocked through the proper channels (your network did it) then it will remain unlocked forever.

If you used a sim-unlock method that required your phone to be jailbroken and then you updated the OS and lost the jailbreak then you will also lose the sim-unlock.

If it was unlocked to begin with, yes. But Jailbreaking, AFAIK, doesn't unlock the phone if it wasn't already unlocked, pre-jailbreak.

True, if your Jailbreak was vital to your unlock, you'll lose it after you update/un-jailbreak. It's worth getting it unlocked properly, then you can update and only lose Jailbreak, not the ability to use your chosen network.
