You coming from an iPhone 5 the advantages of the iPhone 6 are: You own apps already.
You can sell the iPhone 6 in 6 or 12 months and not lose a lot of money. iOS 8.1.1 is quite stable, and the 6 is noticeably better than the iPhone 5 - nevermind the Desire.

The Samsung Galaxy S5 has, imho, the better design. The iPhone 6 looks better, but it's awkward - very slippery, too thin, the buttons in all the wrong cases, and for the bigger screen iOS is a bit dull and not friendly towards one-handed use.
The S5 - I reckon - has better battery life. But its camera is inferior. Bloat is still an issue on the Galaxy. The update situation ain't pretty - some Galaxy devices currently have an ETA for Lollipop aka Android 5 of Q2 or Q3 in 2015...
Both devices are easy to root/jailbreak. So there's a tie.

Honestly, it's a tough question. The iPhone 6 is great. Fast camera, fast everything, solid. But
it's so slippery, so thin, so awkward - I hated it every time I wanted to shoot a quick photo or bang out a text on the go.
The SGS5? It's better than it was made out to be imho. People expected something miraculous.
So what? None of the phones released this year revolutionised anything. The SGS5 is no big upgrade from an SGS4. But from an iPhone 5? Yes.

It's a tie imho. I'd tend towards the iPhone 6. I find Android too messy, I dislike Google's constant change of software, of policies and T&Cs. Scr*w them :p
