Do iTunes iPhone back-ups include all your music?

No, all your music should be in your iTunes library anyway so there's no need for it to be backed up. Or if you've purchased it from the iTunes Store you can just redownload it.

Yes, TJ is right. The backup contains the info about the music that was on your phone/pad. NOT the actual music files. Imagine the size of all the backups you perform plus the original files.... BUT AGAIN: the backup DOES include the relevant info. So when you restore from the backup, the correct tracks will be synced to your iPhone/pad - asuming you haven't deleted the tracks from your PC/Mac.
