What happens if you jailbreak and a new version of iOS comes out?

What happens if you jailbreak and a new version of iOS comes out? Can you get the official update and lose the jailbreak... or do you have to wait for a jailbroken version of the update?

You can update straightaway and lose the jailbreak. Then you have to wait for a new jailbreak.
Or: you see if you really need the new update?! Have your nice jailbreak, wait until the new OS can be jailbreaked. Then you update the OS and jailbreak.
'Our' iPad 2 was on iOS5.1 - it had some jailbreak apps we liked more than what iOS6 brought to the table. When iOS 6.1 was released I updated and then jailbreaked again.

Silly game, really. Apple should just stop playing hardball.

One problem with what I did is: new OS updates usually fix quite a lot of stuff 'under the hood' - security holes, browser privacy etc...
