Can you manually close tasks/apps on Android?

Is it possible to see a list of tasks/apps and end ones I'm not using?

Yes, get a taskmanager/ task killer from the Market.
Some Android phones have a task manager built in - ahem, the Samsung Galaxy S 2 is the only one I know.

Advanced Task Manager is the one I used to use...

I wouldn't recommend going too crazy with the process killing though, you could end up using more battery life and wasting more time having to keep ending and restarting processes. I seem to have a very stable set of apps and the only time processes get manually closed is when I turn my phone off every week or so.

It's worth noting that if your phone has Gingerbread, it is good at managing processes automatically.

True, blizzard. I noticed that on my Acer Liquid - Advanced task killer eats battery juice...
