Why do some phones not have microSD? Surely that's a dealbreaker for many people?

Yes. But a few 100 million happily purchased iDevices without SD-card support have given OEMs hope...
It's also a tad cheaper, it eliminates a point of entry for dirt and faultiness... all little things, but they do add up when you manufacture millions of units - and have to give warranty on said devices.
And lets face it: there's always a trade-off - if all the specs are great, the case is probably some ugly plastic, or the screen resolution sucks. When the case is build from top materials, the camera is probably crap, or the battery cannot be changed etc etc etc
They will never make a phone that is as good as it could be. Same as with all products.
