Can you pin a picture to your iPhone desktop? It's a screenshot I took of a timetable and it's a bit annoying having to scroll through my pics to get to it.

No, without jailbreak you cannot pin an image to your iDevice homescreen like a post-it.
But there are alternatives. You can go to that image/screenshot in your Gallery/Photos app, and add it to a new album. That way you needn't scroll to find it anymore.
Or: consider making use of the new Widget system for the Notification Centre that Apple introduced with iOS 8. Since many apps are currently being updated to add a widget to their package, it's pointless to attempt to list all apps suitable for your needs. But suffice to say, the likes of Dropbox, Evernote etc etc let you add a note or a file to your iPhone's Notification Centre.
Visit the iOS Appstore and search for Widgets. Something suitable for you will come up.
