A question about Android UIs

So I was reading about Android UIs and the Moto E being faster than the Galaxy S5 in some cases.

With Android phones like the S5 can you get rid of the customisations and make the phone run stock Android?

With Android phones like the S5 can you get rid of the customisations and make the phone run stock Android? That would entail rooting the phone and flashing a custom ROM - and voiding your brandnew warranty.

What you might do is install a 3rd party launcher from the Play Store - such as, um Nova or one of the many other ones. (I'm currently not up to date - not using Android much).
Some are much lighter than Samsung's horrible Touchwiz, and many look very much like vanilla Android...
You would definitely gain in speed without having to root your phone.
I use Apex launcher (I think) on a Samsung Galaxy Camera. It's the only way to make that device usable. With Touchwiz it's too laggy.
