If I upgrade to an iPhone 4S, can I copy all my iPhone 3GS data via an iTunes backup?

You can sync all your tracks, photos, videos and (compatible) apps.
But the full back-up also contains device settings etc that are not compatible.

Really? The only issue I had was going from iOS 3.3 on a iPhone 3G to iOS 4.0 on an iPhone 4. It didn't like that at all.
I upgraded the 3G to iOS 4, backed up again and then restored the backup to the iPhone 4 without a problem. All contacts, messages, call logs etc were present. I had to do the music again, though
I wouldn't have thought a 3GS backup on the latest OS would have any issue restoring to a 4S.
Happy to be proven wrong.
There is the other option of backing up to iCloud on the 3GS. Check it has actually backed up Settings > iCloud > Storage & Backups > Manage Storage > This iPhone. Turn on the 4S and log in with the same user and it should sync as if by magic. I've never restored from an iCloud back up.. it should be the same as an iTunes backup but don't take my word as absolute truth. Google it

Ah yeah, go Android where you have to pray your device can be easily rooted so you can install Titanium. Crazy OS
