If I restore my iPhone, will it update the firmware?

If I restore my iPhone, which is currently on 4.1.something, will iTunes automatically update the firmware to the most recent version?

No. Not if you restore it to your backup. ITunes will offer to update the software, but you just hit 'cancel'/'leavemethef*ckalone'... Make sure in iTunes options you disable automatic updating.
However, if your iPhone appears to be dead and you connect it to iTunes to see if it can fix the error, than iTunes may possibly slap the latest software onto the device. But as far as I remember, you'll be notified.

Yes it will unless you have you shsh saved if not use tinyunbrella and google the rest if nit had sound quit hard but really easy

bridtown, that is if your iPhone is jailbreaked ;)
I had an iPhone on 4.1 and restored it a few times from MY backup without ever getting forced to update to 4.2.

Nope sorry but you don't have to jailbreak you device to downgrade use tinyumbrella to get shsh log onto devs server good that easy to find edit host file download the fw you want from loads of sites hold shift and away you go no jb needed

If you restoring from backup you don't need to restore but if you need to restore you have to go for the update sorry
