Yes, most Android devices (all?) won't send you updates when 'root' is detected.
But hey, often the updates are available through unofficial channels first, anyway....

No, you won't get official updates if you root your device. That said, trust me, once you've rooted your device and installed some customs ROMs, official updates via the manufacturers intended means, will seem totally irrelevant and boring :p.

On a rooted N7 even on a custom rom I've seen notifications of software updates. The updates wouldn't actually work on the rom though...
