What does “rooting” mean on Android phones?

Just got an Android phone and someone said I should “root” it. What does that mean?! Hope it doesn't mean what I think it does :p

Rooting refers to the ol' LINUX ability to gain ROOT access, i.e. have complete control over your device. Lower level functionality of Android phones is blocked for your average user. Rooting allows you access to the lower level functions, which include recovery (and backup) tools, the ability to run Apps which need more control than they would normally be allowed, and the ability to flash new ROMs on the phone.
Since ugust of last year I have gone through a dozen or so different ROMs from various sources (CYANOGEN, MODACO & XDA), and I find it quite interesting to try different software.
