I sometimes read my Nook in the bath, and while I'm fairly sure I won't drop it (touch wood!!!), could the steam maybe damage it?

The steam could be enough to discolour the water damage indicator...
Also, I wouldn't! You WILL drop it eventually
Over time the steam can cause all kinds of damage.
You may not notice immediately, but it's bound to happen.
Maybe even in weird little ways...

Yes, you need a waterproof device. All electronic devices are designed to operate in non-condensing humidity. Steam creates water mist and by definition is condensing. Eventually Nook will fail, but there is way of telling when it will happen - could be weeks and could be years.
