Can I sign into the Kindle app with someone else's details?

My girlfriend has an ebook I want to read, but rather than use her Nook I thought I could sign into my iPhone Kindle app with her details? Is there anything to stop me doing that?

Yes, you can temporarily do that... but how does signing into her iTunes/kindle account give you access to a book she has on her nook?

Also: I'm not sure the book will work once you're signed out of her account.
But maybe if you clarify what you intend to pull of 'we' can make a more educated guess ;)

If she has a Nook and eBook was bought from B&N you can install Nook app on your iPhone and sign-in using her credentials. Will work 100% with unlimited number of devices.

If eBook was not bought through B&N you would need to manually pull eBook from her Nook. Unlike Kindle Nook is universal and will automatically load any books copied to it's internal storage, including encrypted Adobe Digital eBooks.

Yes, the Nook app would make more sense... The OP should clarify what s/he really meant ;)
