I might have to pay my bill 1-2 days late (long story!). Will T-Mobile cut me off or do I get a few days grace?

If you miss one payment, generally they'll try again about a week or so later, failing that they may start to get harsh.

They will bar all out going calls/SMS/and data pretty much ASAP. If you call 150 to pay they will lift the bar but it can take an hour or so for the system to update.
If in doubt call 150 in advance and tell them the situation. When I worked for them I would keep an eye on the account and un bar it then call the customer back in a couple of days for payment.
