Is it easy enough to change the microSD card on a phone? Is it simply a case of copying content from the old one to the new one? Will my phone freak out?!

It's easy, yes. Your phone won't freak out.
With the old card in side, connect your phone to a PC or Mac in Mass Storage mode. On the computer open the new drive (ie, your memory card.) Drag anything you want to keep from the memory card to a folder on your PC (something memorable like "my phone")...
Then disconnect your phone safely. Switch off the phone. Take out the old memory card; insert the new one. Turn on your phone, connect the phone....and reverse the above
While you're doing this, you may as well spring clean. Don't retransfer stuff you never used. Have songs and photos in neat folders of 15-20 each... It makes work for your phone's little monkey grinder cpu a lot lighter... and faster.
