If I jailbreak my iPhone 4 and change my mind, can I unjailbreak it?

Yes, but it is not as easy as, say, un-rroting an Android phone (generally speaking).
Twice I found the restore-option via iTunes just didn't do the job, and I could only "restore" by upgrading to a newer OS - which I didn't really want.
Someone will now chime in to point out that I'm talkIng trash; but the fact is: neither the jailbreak nor the recovery or restoration processes are 100% fool- and failproof - regardless of your level of geekiness

Read it carefully, and do some more research so you become aware of all the pitfalls. Then: jailbreak, by all means - imho it's worth it. Though that depends on what you're. Looking for.

You can update your phone using iTunes, which would remove jailbreak. Downside is getting stuck with latest available update.
If you want to un-jailbreak and keep same version of iOS as you already have, it becomes quite a hassle.
