Do any UK networks offering truly unlimited data - with tethering?

T-mobile block tethering on fullvmonty now.

I think the One Plan on Three and the Full Monty Plan (when bought with a phone) both allow truly unlimited data with tethering.

Nope, both sim and 24month contract do. Its in the t&c. Although that is not to say that you can't get around it

I thought it was only SIMO, though it doesn't surprise me it's both. Does that mean the only unlimited data plan, with tethering officially permitted, in the UK is the One Plan from Three?

Officiallly yes. But like I said you could probably get around it somehow on the full monty.

Precisely, though I do tether all the time on T-Mob and they've never even mentioned it, never mind charged me for it.
